If money is not a problem just enjoy escargots de Bourgogne, assiettes de foie gras, poulets de Challans (78€ one says it's the best roast chicken in Paris see this pdf about it), grilled veal kidneys, roasted suckling lamb, pheasant, venison, confit of duck...
The prices are extravagant (54 € for the foie gras, 78 € for the chicken), the wines historical (Montrachet, Latour, Yquem) and are dominated by the statue of commander of the jeroboam of Pétrus 1986 to 10 910 €.
