You will make as many stops as you wish for a picture, water, or a bathroom break. Your local guide will explain the mysteries and current trends of Paris, reveal the great spots to hang out at night, and every 30 minutes you will switch bikes on a Velib' station so you get a full grasp of the system and can keep biking on your own once the ride is over.

Your Parisian host will make recommendations for the rest of your trip in the city and he will send you an email afterwards with the itinerary you did and all the things he mentioned.
